Pimento-Cheese- Stuffed Mini Peppers

Pimento-Cheese- Stuffed Mini Peppers
Yield: 48 servings (Peppers)
Prep Time: 10 min; Cook Time: 25 min; Total Time: 35min
Oven temp: 400° F
Ingredients
1 1lb bag mini sweet peppers, (about 24)
1 8oz pkg cream cheese, softened
1 4oz jar pimentos, drained
½ tsp garlic powder;
½ tsp Kosher salt
pinch of cayenne pepper
1¾ C shredded cheddar, divided
Sliced chives, for serving
Instructions
- Arrange rack in center of over; preheat to 400°
- In large bowl, mix cream cheese, pimentos, garlic powder, salt, cayenne, and 1 cup of cheddar.
- Cut peppers in half lengthwise and scoop out seeds and ribs. Spoon a small amount (1 Tbsp) pimento mixture into each half. Arrange on baking sheet (cut side up). Top peppers with remaining ¾ cup cheddar.
- Bake stuffed peppers until cheese is melty, 10 to 12 min.
- Top with chives before serving.
